Buyers taste process before they taste genetics. A look at what specialty and bulk buyers actually pay for.
Growers often ask which variety earns the premium. The honest answer from most buyers: the premium is made in the box and on the table. Under-fermented beans - slaty, purple, astringent - are discounted everywhere in the world, whatever tree they came from. Fully fermented, well-dried beans with low defects command offers above terminal price even from bulk buyers.
The arithmetic is stark. Even at 2026's corrected world prices around $4,000/tonne, the spread between crude heap-fermented lots and disciplined box-fermented lots can exceed the entire cost of building the fermentation centre in a single season - and in the high-price years the difference multiplies.
